TV Food: Beer Glazed "Pollo" with Bleu Cheese Waffles (Breaking Bad, S02)

In celebrating the series finale of Breaking Bad, I made 5 meals to represent the 5 seasons of the epic series.

Season 2- BRUNCH

Beer Glazed Chicken with Bleu Cheese Waffles

Season 2 introduced us to Gus Fring and his fast-food chain, Los Pollos Hermanos. In this recipe, I incorporated Hank Schrader's beer brewing hobby (Schraderbräu) with the famous Los Pollos Hermanos chicken to make a tasty brunch.

TV Food: The Heisenburger (Breaking Bad, S01)

In celebrating the series finale of Breaking Bad, I made 5 meals to represent the 5 seasons of the epic series.

Season 1- BREAKFAST

The Heisenburger with Blue Salt Fries
The TV phenomenon that is Breaking Bad. The series starts with Walter White celebrating his 50 years over breakfast with his family.

Walter White's big 50

Breakfast turned into a recurring joke for fans because most of Walter White Jr.'s scenes happens during breakfast. In this recipe, I used the usual breakfast staple and made a breakfast burger. It is accompanied with french fries which is seasoned with "blue salt".

Recipe Hack: Conti's Baked Salmon

Baked Salmon with Corn Puree

Conti's Bakeshop and Restaurant is known for their desserts and Italian dishes. One of their most popular dish is the Baked Salmon- Norwegian pink salmon baked with their own topping and served with buttered vegetables and paella rice. I've been craving for the dish and since the nearest Conti's is a plane ride away, I decided to make my own.

In this version, I used Sockeye Salmon. This kind of salmon has deep, rich flavor compared to the delicate taste of the Pink salmon. I also added corn puree to add flavor and depth to the dish.

Street Food Challenge

Deep Fried Soft Boiled Egg with Cabbage and Cucumber Slaw (Kwek-kwek)

A popular street food in the Philippines, Kwek-kwek, is deep fried boiled egg in annatto colored batter. This is usually served with a cucumber and guso (seaweed) salad with spicy vinegar. In my version, I used saffron instead of annatto powder and soft boiled the egg instead of hard boiling. The runny yolk compliments the vinegary slaw and adds more flavor.

TGIF!

Roasted Pork Belly with Mung Bean Coulis and Roasted Squash

So, why is it called "Monggo Day" every Friday? I did a little research (*cough* google *cough*) and found out that Ginisang Monggo was usually served during "Meatless Fridays" during the Lenten season. Nowadays, the modern Monggo can be cooked with pork or even fish.

Here's a nice twist to that Friday tradition. You will never look at Ginisang Monggo the same way again.
