TGIF!

Roasted Pork Belly with Mung Bean Coulis and Roasted Squash


So, why is it called "Monggo Day" every Friday? I did a little research (*cough* google *cough*) and found out that Ginisang Monggo was usually served during "Meatless Fridays" during the Lenten season. Nowadays, the modern Monggo can be cooked with pork or even fish. 

Here's a nice twist to that Friday tradition.You will never look at Ginisang Monggo the same way again.

Quick Fix

BLT Sandwich with Warm Bacon Vinaigrette



For those people on the go, you don't need to compromise your meal or subject yourself to basic fastfood. Here's an easy recipe for that tasty, tasty BLT Sandwich with a twist! I used Bacon Vinaigrette for the dressing and added apples to add sweetness and crunch. It really went well with the salty bacon. This recipe is fast, easy, tasty and healthy. I kid, it's not healthy but it's delicious!

Where Italy meets Spain

Seafood Pasta Paella




Paella is usually made with Arborio rice, but in this recipe I substituted the rice with pasta marrying Spain and Italy. Well, not really... There's a Valencian dish, FideuĂ , which is basically the same thing. But with some minor revisions, I came up with this dish.

Saffron is the main ingredient in this dish and there's really no substitute for it's flavor but for color you can use annatto oil. I used Saffron oil by mixing the saffron with extra virgin Olive Oil.
