Kani and Quinoa Salad with Sriracha-Yogurt Dressing Over Pita
Ingredients:
2 cups shredded lettuce
1/2 cup crab stick, shredded
1/2 cup mango, diced
1/2 cup quinoa
1/2 cup Greek yogurt
1 tbsp. Sriracha
1 pocket round pita bread, cut in half
Cook quinoa. Combine lettuce, crab stick and mango. When quinoa is cooked, toss in with salad.
Mix yogurt and sriracha then drizzle over the salad.
Grill pita bread and cut in half. Add the salad and serve.
