TV Food: Beer Glazed "Pollo" with Bleu Cheese Waffles (Breaking Bad, S02)

In celebrating the series finale of Breaking Bad, I made 5 meals to represent the 5 seasons of the epic series.

Season 2- BRUNCH

Beer Glazed Chicken with Bleu Cheese Waffles



Season 2 introduced us to Gus Fring and his fast-food chain, Los Pollos Hermanos. In this recipe, I incorporated Hank Schrader's beer brewing hobby (Schraderbräu) with the famous Los Pollos Hermanos chicken to make a tasty brunch.

Beer Glazed Chicken with Bleu Cheese Waffles


For the chicken: 

1 pound chicken cut to desired size
2/3 cup flour
oil for deep frying
1 tbsp. honey
1/2 cup beer
Dark ale
1/2 cup catsup
1 tbsp butter
1 tsp cornstarch
salt and pepper to taste

For the waffles:

2 cups all-purpose flour
4 tsp baking powder
2 tbsp white sugar
2 eggs
1 1/2 cup whole milk
1/2 cup bleu cheese, crumbled
Bluer than bleu
1/3 cup butter, melted
a pinch of salt

Heat saucepan and add butter. Add catsup and honey and let simmer. Add beer and whisk cornstarch to thicken. Set aside. Heat oil for frying. Season chicken with salt and pepper and dredge in flour before frying. Fry chicken until cooked and crisp and toss in sauce.

Heat a non stick waffle maker and spray oil. In a bowl, mix flour, salt, baking powder and sugar. Then add eggs and milk. Beat until blended. Add the bleu cheese. Ladle the batter in the preheated waffle maker and cook until golden crisp. Serve with the chicken.
