TV Food: Paila Marina aka Gustavo Fring's Chilean Seafood Stew (Breaking Bad, S04)

In celebrating the series finale of Breaking Bad, I made 5 meals to represent the 5 seasons of the epic series.

SEASON 4- DINNER

Paila Marina

Gustavo Fring became a major character on this season. Of Chilean descent, he first invited Walt for a dinner on his home serving Paila Marina which was also the same dish he served to Jesse when it was his turn to be invited for dinner.

Paila Marina is a traditional Chilean seafood stew dish wish is served in a paila (earthenware bowl).


Paila Marina

Ingredients:

1/4 cup olive oil
1/2 onion, chopped
4 cloves garlic, chopped
1/2 cup white wine
1/2 cup fish stock
1 1/2 lb cod fish or any white fish, cut into chunks
1/2 lb large shrimp, deveined in shell
1/2 lb mussels in shell
1/2 lb clams in shell
1/2 lb razor clam
1/2 lb sliced squid or calamari
chopped cilantro or parsley
salt and pepper to taste

Heat oil in a dutch oven or pot. Saute onions till tender then add garlic and season. Gently place cod and add white wine and fish stock and let simmer.


Add the rest of the seafood and cook till shells open and the shrimp turns pink.


Sprinkle cilantro and serve.
